RECIPE | Chewy Oatmeal & Raisin Cookies

Oh, the smell of cookies fresh out of the oven!

BRB gotta get my cookie fix. *om nom nom*

Alright, so now that I’m done fan-girling over baked treats (JK, fan-girl forever!) it’s time to get down to business.

This was the first time I tried my hand at cookies and I’m glad to say it turned out great. The chewyness of the oats with that burst of sweet raisins, wholesome goodness right there!

What you need:

  • 2 eggs
  • 1 cup all-purpose flour (maida)
  • 3 cups quick-cooking oats
  • 1 cup butter (softened)
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon powder
  • 1 teaspoon vanilla essence
  • 1/2 teaspoon salt
  • 1 cup raisins
  • Honey or raspberry syrup (optional), to drizzle over the cookies

How it’s done:

Step 1 –

<Insert standard ‘Heat oven to 180° celsius while you mix the ingredients’ instruction>

C’mon now, we all know we gotta do that.

Step 2 –  

Get out a big ol’ bowl and throw in all your ingredients – sugar, brown sugar and butter. Beat well. Add eggs, flour, baking soda, baking powder, cinnamon powder, vanilla essence and salt; mix well. Get in an arm workout by stirring in the oats and raisins.

Step 3 –

Try and refrain from eating the cookie dough long enough to lay out a cookie sheet on your baking tray and drop rounded tablespoons of the dough 2 inches apart. Flatten the dough-balls a little, with the back of a wooden spoon.

As always, you can then proceed to lick the back of the spoon (once you’re done of ‘course). This won’t really add to the success of the cookies but sure will add to the yummy in your tummy!

Step 4 –

Bake for 9-12 minutes, until golden brown. Remove and set on a cooling rack for a few minutes. It’ll be a tough wait, but trust me, you don’t want to be an eager beaver and burn your tongue . Been there, done that.

And here’s what you get!

Finally, sit back with a cup of cold cocoa and revel in the awesomeness of these cookies.

P.S. You can also drizzle a little honey or even raspberry syrup over them while they’re still warm. Tastes delish!
